Rebecca has had a career in hospitality spanning almost two decades. Climbing the ranks at Cote from General Manager to Central Operations Director and working at Bill’s as the Chief Operating Officer before joining us as Managing Director. She brings a wealth of experience and a formidable background in executive leadership and business development. With a proven track record of steering companies to new heights through strategic planning, operational excellence, and innovative growth initiatives.
Matt has had a career in hospitality spanning 38 years. Passionate about all things food from an early age, a career as a chef was always his calling. Following completion of an HND in hotel management Matt worked in London, Paris, Sydney and San Francisco before returning to London to embark on his first head chef position. 4 years in Parisian kitchens set the tone for his culinary style and Matt has run some of London’s busiest kitchens including Dell ‘Ugo, Mash and Oxo Tower. He ran his own successful café deli and caterers in Bath for 6 years before joining Jamie Oliver and helping to grow Jamie’s Italian to 40+ sites before leaving in 2015 to set up Coppa Club. Matt is responsible for all things food related within Coppa from menu development through to the design of our kitchens. You will often see him in our kitchens developing new dishes for specials or menus or on the road visiting sites.
Scott is our incredible People Director, he brings an extensive and robust background in recruitment and strategic human resources management from over a decade working with brands including Cote, Sticks’n’Sushi, and managing a successful 11-bedroom inn, pub and restaurant. His expertise spans talent acquisition, employee engagement, and leadership development, ensuring a thriving workplace culture. Known for his strategic vision and empathetic leadership, Scott is dedicated to fostering an inclusive and high-performing environment, driving the company's mission forward through innovative people strategies.
